Cowboy Caviar
Ingredients:
1 can black beans, drained and rinsed
1 can black-eyed peas or pinto beans, drained and rinsed
1/2 c finely chopped orange or red bell peppers
1/4 c finely chopped jalapenos
1/2 c finely chopped red onions
1 T finely chopped garlic
2 T apple cider vinegar
2 T olive or vegetable oil
salt and pepper to taste
